Snacks on Snacks on Snacks: Baked Fish in Foil
I haven’t posted a srsly healthy recipe since the spaghetti squash and vegan “meatballs” from October! Since then, my diet has become a bit more restricted:
- No more Bomb Pops
- No more soda/pop/soda pop
- No more Splenda (Truvia instead)
In these trying times, I’ve sought comfort in the arms of baked fish fillets.

I’m making cod and tilapia, but it’s funny cuz it’s a craw fish!
My favorite recipe book (Google) suggested I bake my frozen cod and tilapia fillets in foil packets. This is very new to me, so I’ll share it for my kitchen-impaired friends like Laura and Ellie.
The rest of you who have been doing this since the dawn of time can shut it. <3
First, I get myself some fish.
I thaw the fillets, and season them.
Each piece of fish gets its own foil packet.
Bake ‘em at 400 degrees for 40 minutes. Donesies!
I served mine with 1/2 C. polenta and 1 C. green beans.

Clearly I need to work on my presentation skills. Green beans on a green plate and fish in a billion pieces. Amateur hour.
The whole plate is 400 calories (polenta is the big ticket item). You could sub in sweet potato or quinoa, too.
Pow. Fish fillets.





True story – I’ve never cooked fish at home (except for the frozen breaded filets from Trader Joes, and I don’t think they count.) Perhaps this will be my first fish recipe!
I love reading your blog. Have you ever tried pan cooking your tilapia on a bed of shredded sweet potatoes? It’s healthy and the sweet potatoes get a nice little crunch. Also, because you eat yogurt and granola, do you make your own granola? I’m still in search of the perfect recipe. You look incredible, by the way!
